Looks complex… really easy.
My mother made this recipe when I was growing up. It’s deeeeeelish! Half a Cornish game hen on the plate, served with veggies and vino. The other half in the fridge for yummy leftovers tomorrow.
Ingredients
- 1 pkg. Uncle Ben’s Wild Rice
- 1 lb. sausage
- 1 unpared red Delicious apple, diced
- 1/4 cup parsley
- 2 eggs
- 1/8 tsp garlic salt
- 1 slice bread
- 1 cup chopped celery
- 1 cup chopped onion
- slivered almonds
- salt/pepper
- 4 Cornish game hens
Prepare rice according to directions on the package. Sauté sausage, onion, celery, parsley. Dampen bread and squeeze out excess water. Crumble into sausage. Preheat the oven to 350 degrees.
Beat eggs and add to sausage mixture. Stir through. Add apple and almonds.
Preheat oven to 350 degrees. Salt and pepper the inside of the Cornish game hens. Stuff with wild rice dressing. Bake, uncovered, for 45 – 55 minutes. Wrap any extra wild rice in aluminum foil and cook along with the game hens.
